¾ Cup Flour
1 Tsp. Baking Powder
1 Tsp. Ginger
½ Tsp. Salt
½ Tsp. Nutmeg
2 Tsp. Cinnamon

2 Eggs
1 Cup Sugar
¾ Cup canned pumpkin
1 tsp. Lemon Juice
1 Cup Finely Chopped Walnuts
Powdered Sugar

Directions:
Directions:
Sift together flour, baking powder, spices and salt; set aside. Beat eggs for 5 minutes with mixer at high speed; gradually beat in sugar. Stir in pumpkin and lemon juice. Fold dry ingredients into pumpkin mixture. Spread on greased and floured 15 X 10 X 1” pan. Sprinkle with walnuts. Bake in preheated 375 degree oven for 15 minutes. Remove from oven. While still hot, turn out onto towel sprinkled with powdered sugar. Roll cake and towel together and let cool.

Filling: 1 Cup Powdered sugar, 4 tbsp. Butter, 8 oz. Cream cheese, ½ tsp. Vanilla.

Beat together until smooth. Unroll cooled pumpkin cake roll and spread evenly with cream cheese filling. Remove towel. Reroll and chill thoroughly. Slice and serve. Will freeze well!
