Serve with pickled beets, thinly sliced onion and cocktail rye bread.

¼ c goose fat
½ c celery, leafy part (no more)
1 medium onion
1 pound chicken liver
1 T savory
1 T basil
salt & pepper
2 hardboiled eggs
½ c mayo

Directions:
Directions:

1. Sauté onion and celery on low flame until soft in goose fat or margarine.
2. Add liver, cover and cook slowly with seasonings
3. Cool mixture. Then process with eggs and mayo. Add salt and pepper to taste.

This recipe was passed down by Jerry’s first mother-in-law from Queens, NY. She was my first Jewish grandmother and she gave me my first taste of liver!
