1 cup orzo
1/4 tsp saffron threads
2 tsp freshly grated orange zest
2 Tbsp fresh orange juice
3 Tbsp olive oil
1/3 cup dried cherries
2 Tbsp slivered almonds, toasted lightly
1 scallion, sliced thin diagonally

Directions:

In a saucepan boil the orzo in 6 cups boiling water with the saffron for 8 minutes, or until al dente; drain it and refresh it under cold water. In a bowl stir together the zest, the orange juice, and salt to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. In a bowl toss the orzo, drained well, with the dressing and stir in the cherries, the almonds, and the scallion.
