3 stalks celery
3 carrots
2 stalks broccoli, cut into florets
peppers
mushrooms, sliced
1 onion, chopped
1/2 stick butter
thyme, basil, oregano
tomato juice
grated cheese

Directions:
Directions:
Sauté onion in butter in Dutch oven. Add pinch of thyme. Add carrots, sliced thin; stir and cook 30 seconds on high. Add celery etc. (building and repeating). Add tomato juice to coat (alternative: add stewed tomatoes) -- until it is the consistency of thick stew. Add basil and oregano -- ratio of 2:1, salt & pepper to taste. Stir occasionally. Cook 5 minutes and remove from heat. Top each serving with grated cheese.

Alternative: Add sautéed chicken breast or browned hamburger meat.
