6 strips bacon cut into 1/2” pieces
1 12-oz can condensed beef broth
1 ½ cup red wine (Burgundy)
3 lbs beef rump cut into 1 ½ cubes
1 TBSP tomato paste
1 large carrot, peeled & sliced
2 gloves garlic, minced
1 medium onion sliced or minced
½ to 1 tsp whole thyme
3 TBSP flour
2 whole bay leafs
1 lb fresh mushrooms, sliced

Directions:
Cook bacon in large skillet until crisp. Remove & drain. Add beef cubes & brown well. Place browned beef cubes in Crock Pot. Brown carrot & onion. Season with 1 ½ tsp salt & 1/8 tsp pepper; stir in flour. Add broth & mix well, add to crock pot. Add cooked bacon, wine, tomato pastes, garlic, bay leafs. Cover & cook on low 8 to 10 hours. – Saute mushrooms in 2 TBSP butter & add to Crock Pot 1 hour before serving.
