1 lb button mushrooms (35-40) or lg mushrooms
2 tbsp butter
1/4 cup chopped celery
2 tbsp finely chopped onion (optional)
2 tbsp finely chopped red bell pepper (optional)
8 oz crab claw meat
1 cup of crushed saltine crackers
1/2 cup shredded Parmesan cheese
1/4 tsp garlic powder
1 tsp dried parsley
1/2 tsp old bay seasoning
1/4 tsp pepper
1/4 tsp kosher salt
1 large egg beaten
6 oz Monterey jack cheese, grated

Directions:
Directions:
Remove stems from mushrooms and finely chop half of them.
Melt butter and saute the mushrooms stems, celery, onion, and bell pepper. When veggies are soft add crabmeat, and crushed crackers. Continue to saute until most of liquid is absorbed by crackers. set aside to cool.

Preheat oven to 400

Combine the crab mixture and shredded Parmesan,garlic, parsley, spices, salt, and egg. stuff mushrooms with a teaspoon of mixture.

put filled caps in dish big enough to hold a single layer. Carefully add 1/2 cup of water to pan. sprinkle mushrooms with Monterey cheese and bake 15 min or until done

I got this from red lobster! Sometimes I use the crab cakes from the schwans man to fill the mushrooms if I want something easy for an app.
