3 or 4 bunches of mustard greens (Andy boys)
garlic cloves
red pepper flakes
extra virgin olive oil
big sauce pot

take bunches of greens, split stems in half and then cut in half. place in colander and rinse.
chop 10 - 12 cloves of garlic more if desired :)
add the oil in the pot enough to cover bottom heat on medium then add garlic let the garlic cook for a minute then gradually add the mustard greens stirring the oil and garlic over them. Let them stand covered for 3 -4 minutes once they have shrunk add more and keep doing this until they have all cooked. They will be dark when fully cooked. also as you cook these add as much red pepper flake as you like but it is optional. You can freeze them in a freezer bag or keep in an airtight container in the fridge.
