4 salmon steaks brushed with olive oil

Lemon sauce:
1/2 C minced shallots
1 tsp minced garlic
1/4 C fresh dill, chopped
1/2 C heavy cream
1/2 C dry white wine
juice of one Lemon
1 tsp Dijon mustard
5 tbsp Butter (not margarine)
Salt and Pepper

Directions:
Directions:
Brush salmon steaks with olive oil on both sides and grill on BBQ for about 15 minutes until salmon starts to flake. Baste salmon while cooking with the lemon sauce.

Lemon sauce:
In saucepan put shallots, wine, garlic and lemon. Bring to a boil for 3 minutes. Whisk in mustard and cream, cook for 2 minutes. Whisk butter in one tablespoon at a time until blended in. Season with salt and pepper. After basting steaks, use remaining sauce to pour over the salmon.

Serve on a bed of white rice.
