"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1/2 C Lukewarm water
1 tsp Sugar
1 pkg Traditional Yeast
1/2 C Sugar
1/2 C Margarine
1 tsp Salt
2 tbsp Vinegar
3 1/2 C Lukewarm water
8 or 9 C Flour

Directions:
Directions:
Combine 1/2 C water, 1 tsp sugar and yeast. Let rise for 10 minutes. In a large bowl put 1/2 C sugar, margarine, salt, vinegar and water. Add risen yeast mixture. Add flour and knead until mixed well. Add more flour if dough is sticky.

Grease a large bowl and add dough, cover it with a tea towel and place in a warm location. Let rise for 2 hours. Punch down dough in bowl and let rise again for 1 more hour.

Knead dough and form into buns the size of a large crab apple. Place them on a greased dark colored cookie sheet. Leave some space between buns but not lots because buns will rise again but they bake better if they are touching each other. Cover with a tea towel again and place in a cold oven with the light turned on. The light gives enough warmth for the buns to rise. Rise for 3 hours.

Take the buns out of the oven and preheat oven to 400 º. Bake buns for about 12-15 minutes. Buns are done when they are golden brown and sound hollow if you tap on them. Cover the tops of the warm buns with butter or margarine. Makes approximately 4 dozen buns.

Personal Notes:
My Mom makes these because she inherited a bowl from her grandma which grandma always used for buns, so she inherited the recipe also.
