10 pounds napa cabbage
1 cup salt
Porridge:
1 cup sweet rice flour
3 cups water
1/4 cup sugar
Sauce:
1 cup garlic
1~2 tbs ginger
1 cup chopped onion
1 cup fish sauce
2 cup hot pepper flake
10 green onions
4 leeks
3 carrots
2 radishes
Other:
1 large storage box

Directions:
Directions:
1.Cut the cabbage lengthwise into quarters, then chop into bite size pieces.
2.Soaking in cold water, assists the salting process.
3.Take out from the water and add the salt for the cabbage, make sure they mix very well.
4.Turn the cabbage over every 30 minutes.
5.After 1.5 hours, wash off the salt with cold clean water at least 3 times.
6.Drain the water.

The Porridge:
7.Add sweet rice flour into 3 cups of water, cook for 5 minutes with medium heat.
8.Then add sugar into it, keep stirring until translucent.
9.Turn off fire, let it cool down.

The sauce:
10.Blend the garlic, chopped onion, fish souce and ginger together for 1 mintue.
11.Then mix with the porridge.
If you like spicy, add 1 cup of hop pepper flake (= mild) into the sauce.
2 cups=spicy, 2.5cups=pretty spicy, no flakes= non-spicy.
12.Wash leeks thoroughly to remove any mud between the leaves.
13.Chop the green onion, leek, carrot, and radish into filaments and mix with sauce.
14.Dry the basin with cotton cloth.
15.If your basin is too small for the cabbage, you can mix the cabbage with sauce bit by bit.
16.Put into a large storage box.
17.If you want sour kimchi as soon as possible, put some into a smaller container, keep it outside of the fridge, so it ferments faster.
18.The big one goes in the fridge and takes longer to get sour.
