9 oz. (250 g) Ground chicken or turkey
1 small Onion, grated
1 small Carrot, peeled and grated
1/2 cup fresh Bread crumbs
1 tsp. dried mixed Herbs
1 tsp. Dijon mustard
1 Egg, lightly beaten
7 1/2 oz. (215 g) store bought Puff pastry sheet, defrosted if frozen
Milk, for brushing
Salt and Pepper

Preheat the oven to 350ºF (180ºC). Put the ground meat, onion, carrot, bread crumbs, herbs, mustard and egg into a large bowl. Season with salt and pepper. Mix together with a tablespoon.
Lightly flour the work surface and place the pastry sheet on it. Cut crosswise into 3 rectangles.
Spoon a sausage shape of the meat mixture along the long side of one of the pastry rectangles, about 1 inch (2.5 cm) in from the edge.
Brush the edge of the pastry with milk and roll it tightly over the meat mixture. Press the edges together to make a long sausage roll shape.
Cut the roll into 6. Repeat the steps with the other pastry rectangles and the rest of the meat mixture. Place on the baking sheets.
Brush each roll with milk and prick with a fork. Bake for 25-30 minutes, until golden. Remove from the oven and place on a wire rack to cool.

Cooking time: 25-30 minutes plus cooling
