Skinless salmon portions
¼ c Worcestershire sauce
¼ c Olive oil
Blackened Seasoning (Cajun's Choice)
Coarse ground black pepper

Directions:
Directions:
In a shallow dish large enough to accommodate the salmon, mix equal portions of Worcestershire sauce and olive oil with a fork. Place salmon in the mixture and turn to coat both sides. Let it sit in the marinade a few minutes while you light the BBQ (medium heat). Sprinkle the salmon moderately with Blackened Seasoning and pepper. Place on the hot grate seasoned side down. Sprinkle additional seasoning and pepper on the other side. Cook for 3-5 minutes per side depending on how you like your fish prepared (seared or well-done).

The Blackened Seasoning is also good with Ahi Tuna that has been coated with melted butter and olive oil, then seared in a hot iron skillet.
