2 eggs
2 c. sugar
1 1/2 t. vanilla
2 c. white flour
1/2 t. baking soda
1/2 t. baking powder
1/2 t. salt
1 20 oz. can crushed pineapple, undrained

Frosting
1 8 oz. pkg. softened cream cheese
1/2 c. softened butter
2 c. confectioners sugar
1/2 c. flaked coconut

Directions:

Preheat oven to 350º
In a large bowl beat the eggs, sugar and vanilla until fluffy. Combine the remaining dry ingredients and add to egg mixture. Stir in pineapple. Pour into greased 9 x 13 baking pan. Bake for 35-40 minutes or until toothpick comes out clean.

For frosting combine cream cheese, butter and sugar. Beat until smooth. After cake is frosted, sprinkle coconut on top.
