2 c. finely grated carrots
4 unbeaten eggs
2 c sugar
1 1/2 c vegetable oil
2 t. baking soda
1 1/2 t. cinnamon
2 c. flour
1 1/2 t. vanilla

FROSTING:
1 stick of butter (room temperature)
1 8 oz. pkg. cream cheese
1 lb. bag confectioners sugar
2 t. vanilla

Directions:
Directions:
Preheat oven to 350º
In a large bowl, combine carrots, eggs, sugar and oil. Beat until mixed. Add remaining ingredients and combine well. Flour and grease 9 x 13' glass baking dish. Bake for 35 - 45 minutes, or until done.
For frosting. Combine all ingredients and beat until smooth. Frost cake when completely cooled
