2-3 tsps bacon drippings or vegetable oil
2 cups buttermilk
1 large egg
1 3/4 cup plain white cornmeal
1 tsp baking powder
1 tsp salt
butter

Directions:
Directions:
1. Coat bottom & sides of 10" cast iron skillet with bacon drippings. Heat in 450º oven for 10 minutes.
2. Whisk together buttermilk & egg. Add cornmeal, stirring well.
3. Stir in baking powder, baking soda, and salt. Pour batter into hot skillet.
4. Bake at 450º for 15 minutes. Serve with real butter.
(I add extra vegetable oil to my cornmeal mixture--about 1/4 cup.)
