1/2 - 3/4 C white Sugar
1 tsp Salt
3 tbsp Flour
2 tbsp Shortening
2 C boiling Water
2 Eggs, beaten
7 to 8 C Flour

Yeast:
2 tbsp Yeast
1 C warm Water
1 tsp Sugar

Meat Filling:
1/2 - 1 lb Ground Beef
1 medium Onion, chopped
1 - 2 cloves Garlic, chopped
Salt, Pepper, Garlic powder and Onion powder to taste (you can give it an Italian flavour by adding Basil and Oregano; or a Mexican flavour by adding Chili powder)

Mix the first five ingredients for buns together; let cool until luke warm.

Add the 1 tsp. of sugar to the 1 c. of warm water and stir until sugar is dissolved. Sprinkle the yeast on top, cover and let rise in a warm place for approximately 10 minutes. Add this mixture to the bun mixture along with the two beaten eggs. Add enough of the flour to make a soft dough (I usually end up using 7 cups, it depends on the flour and the humidity) and knead well. Let rise until double in bulk, about 3/4 hour. Knead down and let rise again.

MEANWHILE: As the dough is rising for the first time, brown the ground beef. Once the beef has browned, remove from heat and drain off any fat. (This can be done by putting the meat in a colander and rinsing under warm water and letting it drain). The mixture must be fairly dry, so make sure ALL the liquid has been drained. Return to the pan and add onions, garlic and seasonings. Cook on medium heat until onions are soft.

Once the dough has finished rising the second time, take a 1 1/2 - 2 inch ball of dough and flatten into a 3 - 3 1/2 inch circle, add approximate 1 heaping tablespoon of the filling to the centre, fold in edges and form into a ball. Place on well-greased cookie sheet, cover and let rise for approximately 3/4 hour or until doubled in size. Bake for 15 minutes at 375º or until golden brown. Test for doneness by tapping the top of a bun lightly with your finger, if it sounds hollow, it's done. Remove from pan and cool completely.

Buns must be kept frozen (if not eating right away) until ready to eat. Just take them out of the freezer and microwave until heated through (about 2 minutes or so depending on your microwave).

They are good by themselves as a snack, or you can serve them with a salad or soup for a light lunch.

Kids love to dip them in mustard or ketchup for extra yummy goodness.
