1 jar of prepared tomato bruschetta (we like Harris Teeter's brand) - or make your own with chopped fresh tomatoes, olive oil, basil, salt and pepper
1 baguette (French or Italian) sliced into 1/4 inch slices
olive oil
freshly grated Parmesano/Reggiano cheese

Directions:
Directions:
Brush the tops of the sliced bread lightly with olive oil.
Bake at 375º until lightly toasted. Remove from the oven and turn over - toast other side lightly. Remove from the oven and place a large spoonful of bruschetta on the toasted bread. Sprinkle cheese on top and bake until cheese is melted. Serve immediately.

This is a very adaptable recipe. You can use bottled artichoke pesto as well for a different flavor, or mix up the spices and/or cheese to your own taste. The important thing is to toast the bread lightly on both sides, add a nice topping, and melt the cheese.
