5 lbs. baking potatoes
6 oz. cream cheese, softened
1 (8 oz.) carton sour cream
6 tbsp. butter, softened
8 oz. Cheddar cheese
1 bunch green onions
1/2 lb. fried, chopped bacon
garlic powder
salt to taste
white pepper to taste

Peel potatoes and cut into cubes; boil until tender, drain, and place in large mixing bowl. Add cream cheese, sour cream, butter and mash. Add Cheddar cheese, green onions, bacon, and seasonings. Spoon into a greased 3-quart baking dish and bake at 350 degrees for about 45 minutes or until thoroughly heated. Yield: 10 servings. Note: Unbaked casserole may be chilled up to 2 days. Let stand at room temperature at least 30 minutes before cooking.

"For as long as I can remember, we have had Mama's potato casserole for traditional Thanksgiving and Christmas meals. It is so delicious. Cally and Alex, I don't know if you were born yet, but years ago, we were having Thanksgiving at B's and Paw Paw's in Linden. Mama Polly took the potato casserole out of the oven and dropped it. The casserole crashed on the floor, resulting in broken glass intermingled with our scrumptious dish. Needless to say, it was devastating!!!" Pollianne
