5-7 white potatoes, cubed
3 slices bacon, cooked and diced
1 jalapeño, sliced into rings
2 T Ranch dressing
1 1/2 c shredded sharp cheddar cheese
1 1/2 c shredded pepper jack cheese
1 c salsa
canola oil (for frying)
Directions:
Directions:
In large pan (or deep fryer) heat oil to 350º. Add potatoes and cook until brown. In a glass 13x9x2 pan add ranch dressing and spread to coat bottom. Add cooked potatoes, bacon, jalapeño and cheese. Bake at 350º until cheese is melted (aprox 5 min). Remove from oven and top with salsa.
