1 Eggplant
Olive oil
Dipping spices*
Red wine vinegar
Salt
Pepper

Directions:
Directions:
Wash & slice eggplant into circles about 1/4 in. thick. In a flat bottom dish, pour enough olive oil deep enough to cover about 2 slices completely. Add a dash of the vinegar, and a dash or two of salt & pepper and swish it around until it gets interspersed. Add a couple of shakes of dipping spices (these can be found with the olive oil--they are for dipping bread). Then dip the eggplant slices and let them absorb some of the mixture. Place on a hot grill until they get very tender, and have pretty black stripes on them.
