Ingredients:
Ingredients:
12 cups cubed bread
9 large eggs
5 1/2 cups milk
3/4 teaspoon salt
1/2 cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 to 3/4 teaspoon ground nutmeg, to taste
1 pound bacon or breakfast sausage, cooked and diced or crumbled, optional

Directions:
Directions:
Spread bread cubes on cookie sheet or large pan to dry for about an hour.
Whisk together eggs, milk, salt, sugar, vanilla, cinnamon, & nutmeg.
If you're adding bacon or sausage, arrange half the bread cubes in a lightly greased 9" x 13" pan, or similar-sized casserole dish. If you're not using any meat, place all of the bread cubes in the pan or casserole dish.
If using meat, scatter it over bread, and cover with remaining bread cubes.
Pour egg/milk mixture over bread in the pan, pushing down on bread to submerge it as much as possible.
Cover with plastic wrap, refrigerate for several hours, or overnight.
Next day, preheat the oven to 350°F.
Sprinkle top of casserole with cinnamon-sugar. Bake 60-70 minutes, until toothpick inserted in center comes out clean, and top is lightly browned.
Remove from oven, and dust with cinnamon sugar, if desired.
Serve warm, cut in squares and drizzled with maple syrup, if desired.
