3 baby red potatoes,
1 large russet potato,
2 stalks of celery,
1 medium carrot,
1 medium onion, any color,
2 Tablespoons of Earth Vegan Butter,
1 quart of vegetable stock cups of water,
5 sprigs of thyme,
3 cloves of garlic,
3/4 cups of flat leaf parsley,
grapeseed or olive oil,
1 tsp. of dried basil,
.5 tsp of dried oregano,
3 T of chopped chives,
1/3 cup of light sour cream

Directions:
Directions:
1. Dice the onions and garlic. Sweat them in a pan over medium heat with the grapeseed oil and vegan butter until you see some color on the onions, about 5 minutes. Add the carrot and celery, after dicing them. Add all of the herbs, chopped finely.
2. Dice the potatoes into a about 1/2 x 1/2 inch pieces. Add them to the pan and brown them lightly. Add the water and vegetable stock.
3. Cook the soup until the potatoes are tender. Taste the soup and add salt and pepper to taste.
4. Stir in the light sour cream and serve. The soup is delicious topped with soy bacon, cheddar cheese, and more chives. Enjoy!

I LOVE potato soup. It is one of my favorite comfort foods. One downside to the classic soup is that it is full of fat. This recipe gives you an equally delicious soup that is so much healthier. Super yummy! it is a great kid-pleaser...who doesn't love potatoes?
