1 cup all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 pinch nutmeg
1 egg, beaten
1 cup milk ( if you want to be crazy, try ½ buttermilk and ½ milk)
2 tablespoons vegetable oil
2 small ripe bananas or 1 large, mashed
1/2 tsp. vanilla

Directions:

Combine flour, white sugar, baking powder, nutmeg, and salt. In a separate bowl, mix together egg, milk, vegetable oil, bananas, and vanilla
Stir flour mixture into banana mixture; batter will be slightly lumpy.
If the mixture seems rather thick, add some more milk.
Heat a lightly oiled griddle or frying pan over medium/low high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

To take this up a notch, add 1 sliced banana and 2 tablespoons butter to 1 cup REAL maple syrup and warm on the stove. Serve with the pancakes. So good, but you may want to steer clear of all medical tests for a few weeks.
