2 Tbl. Chili powder
1 Tbl. Paprika
1 Tbl. Cumin
1.5 tsp. salt
1 tsp. black pepper

4 pounds baby back ribs
1 - 12 ounce bottle Guiness

BBQ SAUCE:
1 -18 ounce Sweet Baby Rays original BBQ sauce
½ cup water
2 Tbl. Brown sugar
1 Tbl. Espresso powder or instant coffee

Directions:
Rinse ribs and then flip topside down. Take a knife and slide it underneath the skin that holds all the ribs together on the bottom side. Stick your fingers underneath and lift/pull off the bottom layer of skin. This allows the ribs to really fall off the bone.

Mix the rub ingredients together and coat the ribs with it. Pat is down.

Boil the Guiness for about 5 minutes to reduce it …about 5-7 minutes. Put ribs in pan, pour beer around ribs. Cover pan tightly with foil. Bake for 1 hour and 30 minutes at 400 degrees.

Combine BBQ sauce, water, brown sugar, coffee and heat on the stove until the coffee blends in .Pull ribs from oven, coat with BBQ sauce and grill just until sauce gets a little crispy. (Or bake in the oven another 10 minutes, uncovered)
