Ingredients:  
1 can black eyed peas
1 package Green Giant frozen white shoepeg corn (no sauce/no butter)
2/3 cup fresh cilantro – chopped
1/3 cup green onion – diced
1 cup plum tomatoes – diced
2 avocados – peeled & cubed

Dressing:
¼ cup olive oil
¼ cup red wine vinegar
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon cumin
1/8 teaspoon black pepper

Directions:
Directions:
In large bowl, combine all ingredients except dressing.
Whisk dressing ingredients together and pour liquid over the ingredients in the large bowl. Stir. Chill in the fridge for at least 1 hour. Can be served at room temp. Serve with tortilla chips.
