1 (2-2-1/2-lb.) Boneless Beef Chuck Roast
1 tbsp. vegetable oil
1 cup water, beef broth or dry red wine
1 cup chopped onion
1 cup chopped carrots
1 (26-oz.) jar tomato and basil pasta sauce
2 cups sliced mushrooms
1 (9-oz.) pkg. refrigerated cheese or mushroom ravioli
Grated Parmesan cheese (optional)

© Trim fat from roast, if necessary. In 12-inch skillet or 5-quart Dutch oven brown meat on all sides in hot oil. poon off fat.Season roast with salt and pepper.

Add water,onion,carrot; cover and simmer1-1/2 hours. Remove roast to serving platter; cover to keep warm. Stir in pasta sauce and mushrooms.Bring to boiling;stir in ravioli and cook, uncovered,9-10 minutes or until ravioli is tender. Slice roast and serve with ravioli and sauce. Sprinklenwith Parmesan Cheese, if desired.
