Cooking wine
Chicken rub
Oil
Soy sauce
Chili powder

Cut chicken into bite size
Mix a little cooking wine with chicken
Mix chicken with chicken rub, oil (option) ,soy sauce, marinade for awhile
I use some iron sticks to string the chicken and grill them ( the book use the toothpick and put the chicken in the microwave for 3 mins, high temp)

I am sorry, we don't measure how much salt, soy sauce we should mix with the meat when we cook Chinese food. Most Chinese cook by experience.
