6 cups water
6 cups chicken broth
1-8 oz can tomato sauce
1 tablespoon chicken bouillon granules
1 pound northern beans
2 ½ pounds pork hock smoked (or ham with bone)
1 large onion, chopped
2 stalks celery sliced
1 teaspoon salt
½ teaspoon pepper
2 cloves garlic crushed
2 carrot sliced
1 bay leaf
2 cups mashed potatoes cooked

Directions:
Directions:
Clean and separate beans. Combine water, chicken broth and beans in large pot and bring to a boil. Boil for 2 minutes. Remove from heat and let stand for 1 hour, covered.

Add: tomato sauce, bay leaf, onion, bouillon, salt, pepper, garlic and pork hocks. Bring to boil. Reduce heat and simmer, covered, for 2 hours.

Remove hocks and trim meat from bone. Return meat to pot along with carrots, celery, and cooked mashed potatoes. Heat soup to boiling. Reduce heat and simmer, covered for about 45 minutes.

You can use instant potato flakes in lieu of cooked mashed potatoes. Add until desired consistency.
