1 lb shrimp (peeled and devained)
2 1/2 Tbsp sherry (split)
6 Tbsp soy sauce (split)
2 Tbsp flour
3 Tbsp corn starch (split)
3 Tbsp oil
1 green pepper (chopped)
1/2 onion (minced)
garlic clove (minced)
2 Tbsp vinegar
4 Tbsp catsup
6 Tbsp sugar
1/2 cup water
1 can pineapple chunks
white rice (cooked)

Directions:
Directions:
Mix 1 Tbsp sherry, 2 Tbsp soy sauce, flour and 1 Tbsp corn starch. Dip cleaned shrimp into batter and fry in oil. In sauce pan, saute oil and add peppers, onions and garlic. Add 4 Tbsp soy sauce 1 1/2 Tbsp sherry and vinegar. In a separate bowl, mix catsup and sugar together - add to sauce. When mixture boils, add 2 Tbsp corn starch and water, stir constantly. Sauce will take on deep, rich brown color. Add pineapple chunks or whatever fruit you like. Add slightly cooked shrimp.

Serve over rice.
