4 medium zucchini
4 eggs
1 cup grated jack cheese
1/2 cup flour
Finely chopped scallions

Grate Zucchini and place in refrigerator for one hour. Pour off all the liquid accumulate. Beat eggs well. Add cheese, flour and zucchini. Season with salt and pepper to taste. Place in a buttered souffle dish. Top with pats of butter. Bake for one hour at 350º.
