1/2 Cup Vegetable Oil
2 Eggs
1 Tsp. Vanilla
2 Cup Flour
1 1/2 Tsp. Baking Soda
1/8 Tsp. Salt
4 Medium Bananas (soft and ripe, not rotting)
1 Cup Walnuts (shelled, not crushed)

Grease loaf pans (Davises use three loaf pans 7 1/2 inches long – 3 1/4 inches wide – 2 1/2 inch deep). Mash bananas by hand in a large mixing bowl. Put bowl in a mixer on medium speed, add sugar, oil, eggs, and vanilla. Stir together flour, baking soda, and salt. Gradually add to the banana mixture and blend thoroughly. Hand stir in nut meats. Pour into a well greased loaf pans and bake until bread tests done.
