6 chicken cutlets
1c. cream cheese
1c. grated parmesan cheese
1/4 tsp salt
6-8 oz peach preserves
1 tsp soy sauce
1 tbsp honey
1 tbsp brown mustard
1/2 c. pecans halves
Butter flavored Pam

Directions:
Directions:
Lay chicken cutlets on Pam sprayed baking sheet. Mix parmesan cheese, cream cheese and salt together. Place a big dollop of the mixture in the center of the cutlet. Roll up and secure with colored tooth picks. (The color is so you don't loose while you are eating.) Cook for about 30 minutes at 350º until done. While this is cooking, mix together your preserves, honey, soy sauce and mustard. You may change this a little depending on your own taste. Mix well, add pecans and heat in the microwave until warm. Pour mixture over cooked cutlets and serve. Goes great with potatoes.

I copied this dish from a meal I ate at an Atlanta rstaurant when I was dating your Uncle Bubba. It is the perfect mixture of salty and sweet. Hope you love it. We love you.....and Nate!
