3-5 lb. beef roast

Directions:
Trim roast of any excess fat around edges. Pepper roast thoroughly on both sides and place in crock pot. Add enough water to just cover the roast. Cook on low for 8-10 hours. For gravy, mix 1/2 c. corn starch in a cup with enough water to make smooth consistency but not too thick. Add to crock pot slowly, stirring constantly. Or you may remove some of the juice from the crock pot into separate pan to make gravy on the stove over low flame if you prefer.
