1 (10 oz) pkg chopped frozen spinach
1 c. ricotta cheese
1/2 c. parmeson cheese, grated
1 c. mushrooms, chopped
2 T. onion, minced
1/4 t. oregano, dried leaf
1/4 t. salt
1 egg, slightly beaten
24 thin 2" slices of prosciutto or ham slices
sour cream for garnish

Cook spinach per package directions. Drain well and squeeze out all moisture. Spray muffin tins with Pam spray. Press ham into sides of each muffin tin. Combine spinach, ricotta, parmesan, mushrooms, minced onion, oregano, salt, and remaining prosciutto and spoon cheese filling over ham.
Bake at 375º for 20-25 minutes. Serve hot or cold. Garnish with dollop of sour cream.
May be made ahead and covered stored in refrigerator up to 24 hours. To serve, preheat oven to 350º and baked 6-10 minutes.
