Place roast on a rack in a shallow roasting pan. Sprinkle with salt and coat heavy with pepper. insert a meat thermometer. Bake, uncovered in a 325º oven for 1 3/4 to 2 1/2 hours or until meat reaches desired doneness (for rare: 140º; medium-rare: 145º). Remove from oven and let stand for 10-15 minutes. Upon letting meat stand temperature will raise 5-10º. Any temperature past medium-rare may be done in prepared hot au jus before serving.

Do not recommend baking past medium-rare. For additional doneness finish cooking in prepared au jus.
