4 chicken breasts or other parts of chicken
1 can water chestnuts, drained
1/2 tube crackers, crushed
2 slices white bread
1 pan cornbread, cooked, cooled and crumbled*
1 lg. onion, chopped
Salt, pepper and sage, to taste
Reserved chicken broth

Cook chicken in crock pot covered in water overnight. Reserve broth. Take cooled chicken and pull into pieces/strips. Mix all other ingredients together except broth. Put in 9x13 in. casserole dish. Add reserved broth to top of dish. This keeps dressing moist during cooking. Cook at 350ºF for 30 minutes or until brown. *Cornbread recipe: Mix 3 c. cornmeal, 1/2 c. self rising flour and 4 med. eggs together, then add enough buttermilk to make mixture the consistency of pancake batter. Grease pan, heat and add mixture. Cook at 425ºF for about 20 minutes. Works best if cornbread is made in muffin tins. *Recipe from Sheila K.
