1 lb rockfish, cleaned, cut into four equal pieces
Salt and pepper to taste
3 Tbs. mayonnaise
1 Tbs. Dijon mustard
8 thin slices lemon
Handful of fresh herbs such as thyme, oregano, chives and/or dill
Aluminum foil, cut into four large squares
Cooking spray

Preheat oven to 400. Lightly spray foil with cooking spray and lay fish on each piece of foil. Season with salt and pepper. In a small bowl, whisk together mayonnaise and mustard. Spread mayonnaise mixture atop each piece of fish, coating well. Lay two slices of lemon on top of mayo mixture. Next, layer herbs (I like to use whole herbs still on their stems for presentation). Wrap up each piece of fish tightly in foil.
Place foil packets on a sheet pan and bake in preheated oven 10-12 minutes or until fish flakes easily. To serve, slide fish and contents of foil onto a plate.
