1 red onion, chopped
1 T. olive oil
1 clove garlic, crushed
1/2 t. mild chili powder
1/2 t. ground cumin
1/2 t ground coriander
1 1/2 c. tomato juice
1 1/2 c. vegetable or beef broth
Pinch of salt and pepper to taste.
1 T. chopped fresh parsley
2 cans white beans

Directions:
Directions:
In large soup pan, saute chopped onion in heated olive oil until soft. Take pan off the heat, add garlic, chiii powder, coriander and cumin. Stir well, and put back on heat for 1 minute.
Add tomato juice, and broth. Drain beans and add to pan. Stir until it boils. Add more liquid if needed.
Cover pan, cook for 15 minutes, stirring.
Turn off, let cool. Using ladle, put half of soup into food processor, blend until smooth, then ladle back in pan. Mix and heat until gently bubbling. Stir in parsley. Add salt and pepper to taste.
