1 Prime Rib with bone in (size depends on quantity, roughly 1/2 lb per person)
1 fresh whole garlic
Port wine (or other red wine)
kosher salt
cracked pepper

Directions:
Prepare roast by cutting several small slits under skin and inserting cloves of garlic in each slit. Tip to prepare garlic cloves: cut both ends off garlic, peel and then separate cloves.
Place roast bone side down on rack in roasting pan. Pour wine over roast, sprinkle with kosher salt and cracked pepper. Baste periodically. Roast in slow oven 300º ~20-30 minutes per pound depending on end state desired. Rare 140; Medium 160; Well 170 If it starts to dry out add more wine. A meat thermometer comes in handy here. Remove from oven let stand for 10-15 minutes. Slice and serve. Note: roast continues to cook for several minutes after removing from oven.

Mae and Denise like to put vegetables in roasting pan under the rack to bake in the drippings while the roast is cooking. If you are roasting a large cut wait until half-way done before putting vegetables in or they will get overdone
