Ingredients: Sauce: 1 medium onion, chopped 3 cloves garlic, chopped 2 tbsp. olive oil 1 14 1/2-oz. can tomatoes, chopped 3 cans tomato sauce 1 tbsp. dry Italian seasoning 2 tbsp. sugar 1 tsp. sweet basil salt & pepper to taste 2 cups water crushed red pepper flakes to taste
Meatballs: 5 crackers (soaked in water; drained) 1 1/2 lbs. ground beef 2 eggs 1/2 cup green onions, chopped 1/2 cup white onion, finely chopped 1 clove garlic, chopped 1 tbsp. chopped parsley 1/2 cup fresh, grated Parmesan cheese salt & pepper to taste

Directions:Substitutions: Any of the following can be substituted for crackers: 2 pieces of light bread, 1/2 cup Italian bread crumbs, or 1/2 cup oatmeal. Sauce: Saute onions and garlic in olive oil. When golden brown, add tomatoes and tomato sauce. Stir in sugar, basil, salt, pepper, and water. If too thick, add more water. Make the meatballs while the sauce is cooking. Meatballs: Squeeze water out of crackers. Add beef, eggs, garlic, parsley, cheese, onions, salt, & pepper to crackers. Roll into meatballs. Brown in skillet until done. Add meatballs to sauce; simmer for at least 4 hours on medium-low heat. Serve over spaghetti. |

Notes: I still don't think I can make them like Mama Polly, but they are a close second! Also, they are very tasty when cooked on an outdoor grill, should you ever find yourself without electricity...Christmas Eve, 2009!!
