4 medium russet potatoes (about 1 1/3 lbs.)
1 (1 1/4 oz.) pkg. taco seasoning mix
3 Tbsp. cornmeal
1/4 c. olive oil or vegetable oil

Directions:
Directions:
Heat oven to 450º. Pierce potatoes with fork; place on microwave safe paper towel or roasting rack in microwave. Microwave on high for 6-8 minutes or until almost tender, turning once halfway through cooking. Meanwhile, in a resealable plastic food storage bag, combine taco seasoning mix and cornmeal; mix well. Cut cooked potatoes lengthwise into quarters; place in large shallow dish. Drizzle with oil; toss to coat. With a large, slotted spoon, place potatoes in bag of seasoning mixture and toss to coat well. Place potatoes back into baking dish and bake until tender and golden brown.
