6-8 slices of bacon
7 eggs, lightly beaten
2 c. milk
1 1/2 tsp. dry mustard
1/2 tsp. salt
4 c. cubed day-old bread
1 c. shredded cheese (I use cheddar/jack)
1/2 tsp. black pepper
1/4 c. chopped onion
1 c. fresh spinach leaves, chopped

Preheat oven to 325º . Cook bacon until crisp and crumble. Cook onions in bacon drippings over med-low heat until softened, but not brown. In a large mixing bowl, combine eggs, milk, mustard, salt and pepper. Butter a 9" x 9" baking dish and layer with bread cubes, spinach, crumbled bacon, onions and cheese. Pour egg mixture over the casserole. Bake uncovered for 55-60 minutes, or until eggs are set. Makes 4 servings.
