1/3 c sugar
3 Tbs Minute Tapioca
2 3/4 c milk (2% or whole)
1 egg, well beaten
1 tsp vanilla

Directions:
Directions:
Mix first 4 ingredients in medium saucepan. Let stand 5 minutes. Cook on med. heat, stirring constantly until mixture comes to full boil. (A boil that does not stop bubbling when stirred. Pudding thickens as it cools.) Remove from heat, stir in vanilla. Cool 20 minutes, stir. Serve warmed or chilled. Store leftovers in refrigerator.
