1 chicken cut up (about 3 lbs.)
2 C sliced carrots
1 C chopped celery
1/2 C chopped onion
1 bay leaf
1 1/2 tsp salt
1/2 tsp pepper
1/3 C flour
Bacon Dumpling ingredients:
2 C flour
1 Tbsp baking powder
1 tsp salt
2/3 C milk
6 slices bacon
1 Tbsp parsley flakes
1,2 C shredded cheddar cheese

Directions:
Directions:
In a large pot place chicken, carrots, celery, onion, bay leaf, salt, pepper and enough water or chicken broth to cover. Bring to a boil: cover and cook slowly about 1 hour. Remove chicken pieces from the pot. Blend together flour and 1 C cold water. Stir into stew and cook until thickened. Bone chicken and return meat to pot. Drop bacon dumplings by rounded tablespoonfuls onto simmering stew. Cover and steam about 15 minutes. Uncover;continue to cook 5 minutes longer.
Bacon Dumplings;
Stir together dry ingredients. Chop bacon, fry until crisp, reserving 1/4 C bacon grease. Combine milk and bacon grease. Add liquid, bacon bits and cheese all at once to flour mixture, stirring until all flour is moistened.
