Fish Filets
Bisquik
Oil
Flour to Dredge
Panko Bread Crumbs
Yellow Corn Meal
Cajun Spice (or your fav Spice Combo)

Directions:
Directions:
Using the directions on the Bisquik package, prepare pancake batter but add a little extra liquid. Mix 3/4 Panko crumbs with 1/4 cornmeal and spice to taste. Take the filets and dredge in flour (Flour should be spiced up with your fav Spice combo) ,dip in the prepared batter, then roll in Panko Bread crumbs. Refrigerate for at least one hour before frying. Fry at 350* to 375* until golden. Serve with your favorite dippers.

We have a tradition of making a yearly fishing trip to Lake Amistad with my daughter, my SIL, and all of their compadres in search of the next Texas record Bass. We are still in search of the record Bass but have more than secured the record of beers drunk in one trip.
