4 tsp. salt
2 tsp. paprika
1 tsp. onion powder
1 tsp. dried thyme
1 tsp. ground pepper
1/2 tsp. cayenne pepper
1/2 tsp. chili powder
1/2 tsp. garlic powder
1/2 of 1 onion, quartered
1 4 lb. whole chicken

In a small bowl mix all dry spices together. Remove and discard the giblets from chicken. Rinse chicken cavity and pat dry with a paper towel. Rub the chicken, inside and out, with spice mixture. Place onion in the chicken cavity. Place chicken in a ziploc bag and seal. Refrigerate overnight. Preheat oven to 250 degrees. Remove chicken from bag and place in a roasting pan. Bake uncovered for 4 to 5 hours. Let chicken stand for 10 minutes before carving.

A smaller chicken, usually sold under the name of "young chicken" can be used to feed a smaller group. Use the same amounts of spice ingredients. Cooking time will be approx. an hour less.
