2 tbsp. olive oil
2 large red onions, chopped
1 pinch of granulated sugar
2 cloves garlic, finely chopped
1 tsp. dried basil
1/2 tsp dried oregano
1 bay leaf
2 cups chopped fresh tomatoes
3 cups chicken stock
1 tbsp. balsamic vinegar
1/2 cup orzo (rice-shaped pasta)
salt and freshly ground pepper (to taste)
3 tbsp. finely chopped fresh parsley
1/4 cup (or more) freshly grated Parmesan cheese

Directions:
In a large pot, heat the oil on medium heat. Add the onions, sugar, garlic, basil, and oregano. Saute until the onions turn light brown, about 10 minutes. Add bay leaf, tomatoes, chicken stock, and balsamic vinegar. Bring to a boil and simmer for 10 minutes. Add the pasta and simmer, uncovered, until the pasta is tender, about 10 minutes more, stirring occasionally. Season with salt and pepper. Stir in parsley. Ladle into bowls, and sprinkle each bowl with grated Parmesan cheese just before serving. Serves 6.
