3 large green bell peppers
1/2 lb. lean ground beef
1 T. minced dried onions
1 small garlic clove, pressed
1/2 tsp. oregano
1/2 tsp. salt
1/2 c. to 3/4 c. cooked white rice
1 8 oz. can tomato sauce
1/2 c. grated mozzarella cheese

Cook rice according to package directions. Cut each bell pepper in half lengthwise (from stem end to bottom) so that each pepper makes two small bowls. Remove seeds and membranes and rinse peppers. Cook peppers in enough boiling water to cover for about 5 minutes. Drain peppers. In a large skillet combine the ground beef, onion, garlic, oregano and salt. Cook until beef is browned. Drain fat from skillet, then stir in the rice and approx. 1/3 to 1/2 c. tomato sauce (reserving approx. 1/8 c. sauce). Preheat the oven to 350 degrees. Stuff peppers with skillet mixture. Place peppers upright in an ungreased baking dish. Spread a thin layer of the remaining tomato sauce on top of each pepper. Cover dish with foil and bake for 35 to 45 minutes. Uncover dish and sprinkle each pepper with mozzarella cheese. Bake until cheese is melted and slightly browned, about 10 to 15 minutes longer.
