1 c. sundried tomatoes packed in oil
4 cloves garlic, or to taste
1/4 c. cubed Parmesan cheese
1/2 c. fresh basil leaves
1/4-1/2 c. walnuts
Extra virgin olive oil
Salt and pepper to taste

Directions:
Directions:
Combine all ingredients in a food processor except olive oil. Add olive oil by dribbling in while food processor is on to thin to desired consistency. Thicker pesto can be used with bread, crackers, or veggies as a thick "dip". Thinner pesto can be used as a sauce over pasta or vegetables. *You can reconstitute dried tomatoes by placing them in olive oil to soften.
