2 lb bag frozen hash brown potatoes (I use hash browns with onions and green peppers)
8 oz sour cream
1/2 c. melted butter
1 10 3/4 oz can condensed cream of chicken soup (can also use cream of mushroom soup)
2 c. grated cheddar cheese
Salt and pepper to taste

Thaw hash browns, then mix all ingredients together. Pour into greased 13 x 9 baking pan or suitable casserole dish. Bake at 350º for 45-60 minutes.

If you believe that all casseroles need a crunchy topping, go ahead and mix up 2 c. cornflake crumbs and 1/2 c. melted butter and spread on top before baking. But when you have this dish at a Kelsay holiday meal, it comes topless. :)
